1/3 cup walnut pieces (I used pine nuts) 1/4 cup butter (I used this amount minus 2 TBSP) 2 small or medium zucchini, coarsley shredded lemon juice salt and pepper to Taste
Instructions
1. Saute nuts in butter until lightly browned (Be careful not to burn.) Remove nuts.
2. Saute zucchini briefly--about a minute to two--in the same pan.
3. Sprinkle with a few drops lemon juice; season.
4. Add nuts toss and serve. YUM!!!!!!
