Ingredients
1 pound haddock fillet (440 g)
salt and black pepper to taste
4 sprigs fresh sage
4 sprigs fresh mint
½ cup (120 mL) water
10 cloves garlic, peeled and minced fine
4 pieces of ginger, 1-inch thickness, peeled and chopped into flat slices
1 lemon, juiced
Instructions
1. Clean fish and pierce it with a fork
2. Rub salt and black pepper on all sides
3. Put the haddock in a large shallow stovetop pan on medium heat
4. Place the sage and mint over the fish, and then add the water
5. Add in garlic and ginger pieces, and pour lemon juice over the fillet
6. Cover the pan and cook over high heat for 5-7 minutes
7. Then simmer for another 10 minutes, or until fish is flaky and cooked through
