PAM'S CHICKEN SALAD

Ingredients

2 whole (or 4 split) chicken breasts
3/4 cup mayo (SCD recipe)
sliced almonds
couple handfuls green grapes
salt to taste
pepper to taste
paprika to taste

Instructions

1. I roast the Chicken in the oven the night before (leave the skin on to keep it moist or cover the dish to keep in the juices).
2. Cube the Chicken add the mayo.
3. Slice the grapes in half and toss them with the almonds into the chicken mixture.
4. Salt and Pepper and Paprika to taste.
5. Serve on a bed of greens! YUM! The grapes do the trick!
