GARLIC SALMON 2 cloves garlic, crushed 2 teaspoons grated lime rind 1 tablespoon lime juice 1 teaspoon salt freshly ground black pepper 4 fillets salmon (or use thick white fish fillets or chicken breasts) 1 tablespoon butter 1 tablespoon olive oil LIME MAYONNAISE 1/2 cup mayo (150G) ( I use a simple Italian recipe: 2 egg yolks, 1tsp salt, 2-3 teaspoons lemon juice or vinegar, 1/2-3/4 cup olive oil) 1 tablespoon lime juice 1 tablespoon finely chopped dill salt and pepper (optional)
Instructions
1. SALMON: Combine garlic, lime rind, lime juice, salt and pepper and rub/coat salmon with this mixture.
2. Heat butter and oil in shallow frying pan and cook salmon both sides as desired.
3. Serve salmon topped with lime mayo and extra wedge of lime.
4. MAYO: Combine all Lime Mayonnaise ingredients.
