Ingredients
2 pounds salmon or bluefish
3 cups chopped tomatoes
1 cup chopped onion
1 cup chopped olives
1 large clove minced garlic
1/4 teaspoon ground cumin
1 tablespoon honey
1/4 cup lemon juice
3 tablespoon olive oil
1 tablespoon chile powder
1/4 teaspoon ground cloves
1/4 teaspoon ground coriander
salt
pepper
parsley
Instructions
1. Chill the fish in a little lemon juice and sprinkled with salt.
2. Sauté the onions, garlic and spices in oil.
3. Add tomatoes, honey, olives and lemon juice and simmer 15 minutes or so.
4. Pour sauce over fish, season with salt, pepper and parsley and bake 20-30 minutes at 350F (180C).
