We spotted some pineapple in the fridge and leftover coconut in the pantry, and we ended up with this mock piña colada!
Ingredients
G cup (60 mL) homemade Almond Milk (p.364) ¾ cup (180 mL) water N-½ cup (55-80 g) pineapple, peeled and chopped ½ large ripe banana, peeled 2 tablespoons (28 g) SCD-safe unsweetened, shredded coconut
Instructions
1. Process the ingredients together in a blender until well combined
2. Enjoy! *Note: Wait for at least 3 months after symptoms have cleared to try any kind of shredded coconut
