When I first came to America, I would just buy spices from the local grocery store down the street. Now, after years of cooking with SCD, along with having access to groceries that stock the raw ingredients, I make my own spice mixture to use in curries and other Indian-inspired dishes, just the way my mother and grandmother did before me. - Nilou
Ingredients
2 1-inch size cinnamon sticks 7 whole cloves 3 teaspoons whole coriander seeds 3 teaspoons whole cumin seeds ½ teaspoon fennel seeds 1 teaspoon whole black peppercorns ½ teaspoon turmeric powder N teaspoon red cayenne pepper ½ teaspoon cardamom powder pinch of saffron 1-2 dried red chilies (cayenne or jalapeno or Thai), seeded
Instructions
1. Mix all base ingredients in grinder (can use coffee grinder) until you get a fine powder-like consistency
2. Make sure the seeds are ground into powder
Yield
½ cup (55 g) spice blend
