We wanted to include a recipe for making homemade “sausages” that can be served with eggs, toast, fruit, and whatever other goodies you put on the table. So whether it is just you sitting down with the morning paper for a good hearty breakfast, or having family and friends over for a Sunday morning gathering, roll out the strips and get them baking!
Ingredients
1 pound (440 g) ground chicken 1 clove garlic, peeled and grated fine 2 scallions, ends trimmed and chopped fine 1/2 teaspoon dried parsley ½ teaspoon crushed fennel seed 1 tablespoon (14 g) sesame oil ½ tablespoon (10 g) honey salt and black pepper to taste olive oil for coating pan
Instructions
1. Mix together all ingredients in a small bowl
2. or until done
3. Coat a baking tray with the olive oil
4. With wet hands, roll the chicken mixture into small sausage strips about 1½-inches long by ½-inch wide
5. Space them evenly apart on the tray
6. Press down gently to flatten them slightly so they cook evenly through
7. Bake them for approximately 25-30 minutes in a pre-heated oven at 350°F (180°C or gas mark 4) oven,
