3 chicken breasts 5 chicken thighs 2 mangos raisins 1 large spanish onion, finely sliced ginger (1/2 the amount of onion), ground butter salt pepper pineapple juice
Instructions
1. Slice the chicken in small pieces or leave large.
2. Sauté the chicken in butter and remove it.
3. Sauté the finely sliced onion and grinded ginger, and mango until onion is soft.
4. Add some pineapple juice and water and handfull of raisins and simmer for few minutes.
5. Add the chicken back in the pot. Simmer for few more minutes until the raisins are plump.
