1 egg, well beaten 1 teaspoon butter 1" square of Blue Cheese crumbled 2 slices sweet onion, red or Vidalia honey a small sprig minced parsley pinch of dried rosemary (optional) ripe pear sectioned and cored
Instructions
1. Heat a skillet, add butter and saute onions and pears over medium heat until pears caramelize and onions are translucent. remove to a plate.
2. Put beaten egg in pan and tip from side to side pulling back a little so liquid will run from surface.
3. Add blue cheese and then pear mixture. Fold omelet and transfer to a plate.
4. Sprinkle with parsley and add a tiny drizzle of honey.
