1. Melt the butter with 2 tablespoons of the honey.
2. Mix in the chestnut flour, rough almond flour and the remaining 1-1/2 tablespoons of the honey.
3. In a separate bowl (or cup) mix the baking soda with the boiling water and then stir this into the main biscuit mixture.
4. Place in small heaps on a baking tray and cook at 160 degrees C for 10-15 minutes or until brown. (Sometimes I pat some of the air out of the biscuits after about ten minutes cooking time to make them a bit crunchier.)
5. Makes about 14.
