> Sue's Onion Rings
SUE'S ONION RINGS
These fried onion rings are so crunchy and delicious. Try it with Nonnie’s SCD Ketchup (p.353) or Tartar Sauce (p.359)!
Ingredients
2 egg whites, beaten stiff ½ cup (120 mL) water 1 egg 1 tablespoon (15 mL ) sunflower oil ¾ cup (84 g) almond flour 1 teaspoon salt 1-1½ yellow or white onions, peeled oil for frying
Instructions
1. Combine the egg whites, water, and whole egg together with whisk in a mixing bowl
2. Add all other ingredients except the onions and oil
3. Mix well and set this batter aside
4. In the meanwhile, slice onions into rounds to a thickness you prefer and separate them into individual rings
5. Fill a shallow pan with oil until its deep enough for frying the rings
6. Set the burner on medium-high and allow the oil to heat up–sprinkle a few water droplets into the pan – the oil should sizzle when ready
7. Dredge the onion rings in the prepared batter, then drop them into the oiled pan and allow them to fry for a few minutes until batter is crisp and onion cooked through
8. It should be golden-brown in color – do not over-cook batter as it will burn
Yield
35-40 rings
