> No Honey No Dairy Blondies
NO HONEY NO DAIRY BLONDIES
Blondies are a part of the rituals of growing up: devouring them after a sports practice, at a mom’s-only tea party, at family gatherings and reunions. We have created this SCD version that melts in your mouth despite having no dairy or honey. The natural sweetness is derived from the raisins and applesauce.
Ingredients
1 cup (110 g) coconut flour ½ teaspoon baking soda ½ teaspoon orange zest 2 eggs 1½ cups (360 mL) Homemade Applesauce (p.340) G cup (55 g) raisins 1 cup (240 mL) SCD-safe or fresh-squeezed orange juice to moisten
Instructions
1. Mix all ingredients together in a food processor
2. If the consistency is too sticky, use more applesauce or orange juice to moisten
3. (The coconut flour can bind easily and therefore you might need more juice or applesauce to moisten)
4. Pour the batter in a glass baking dish or pie pan and allow to bake for 30-40 minutes at 350°F (180°C or gas mark 4)
5. Remove the blondies when a knife comes out clean
Yield
12-15 squares, about 3-inches in diameter
