My mother always made out- standing meatballs. We have adapted her recipe to be SCD-compliant so everyone may enjoy this delicious specialty. - Pam
Ingredients
1 pound (440 g) ground beef 1 egg 3 cloves garlic, peeled and chopped fine ½ onion, peeled and chopped fine ½ green pepper, seeded and chopped fine 2 teaspoons salt 1 teaspoon black pepper 2 teaspoons oregano 2 tablespoons (30 mL) olive oil, divided
Instructions
1. Combine all ingredients together in a mixing bowl, along with 1 tablespoon of the olive oil
2. Roll into 1-inch balls with wet hands (so they do not stick), and set onto a greased (with remaining Bake them at 350°F (180°C or gas mark 4) for 20-30 minutes, or until the meatballs are cooked olive oil) baking tray
