Scd For Autism

GRAHAM CRACKERS 2
This classic American cracker has been recreated with applesauce as a base for the missing dairy. The mixture of the two nut flours gives it a nice, varied consistency.
Ingredients
4 cups (440 g) almond flour 2 cups (220 g) hazelnut flour ½ cup (170 g) honey 1 egg ½ teaspoon cinnamon ½ teaspoon ginger ¼ teaspoon nutmeg ½ teaspoon baking soda 1 cup (240 mL) Homemade Applesauce (p.340) oil/ghee for greasing pan
Instructions
1. Preheat the oven to 325°F (165°C or gas mark 3)
2. Whisk all the ingredients together in a mixing bowl
3. The batter/dough consistency should be firm and release easily (not sticky)
4. Grease a sheet pan with oil or ghee, and roll out batter onto it
5. Press dough down so it is flat
6. Allow it to bake in the oven for 10-15 minutes, or until golden brown on edges
7. Cut into squares before it cools down
Yield
30-35 crackers (1.5-by-2-inches in diameter)
