Ingredients
12 hard-boiled eggs, peeled and yolks removed
4 tablespoons (55 g) Pam’s Mayonnaise (p. 354)
½ cup (50 g) celery, ends trimmed and chopped fine
½ cup (75 g) apples, cored, peeled and chopped fine
Instructions
1. To make hard-boiled eggs: In a stovetop pan, add in enough water to immerse the eggs you have placed in gently
2. Turn on medium flame, and when water comes to a boil, turn off the burner
3. Cover pan with a lid and let stand for 15 minutes
4. Cool eggs by immersing them in cold running water
5. Remove the hard-boiled yolks
6. Chop the hard-boiled whites of the eggs, and toss together with the other ingredients
7. Serve immediately, or store in fridge for future use
