CHRISTMAS COOKIES 2
Christmas festivities in the Ferro and Prasad households are incomparable when it comes to delicious, sweet indulgences. With vanilla, ginger, cinnamon and nutmeg to provide Xmasy inflections and applesauce to give it a lighter consistency, these cookies taste good too!
Ingredients
2 cups (220 g) almond flour 1½ cups (165 g) hazelnut flour ¼ cup (85 g) honey 3 eggs 2 teaspoons baking soda ¼ teaspoon salt 1 teaspoon vanilla extract ½ cup (120 mL) Homemade Applesauce (p.340) 1½ teaspoons fresh ginger, peeled and grated ¼ teaspoon cinnamon powder ¼ teaspoon nutmeg powder optional: 2 dates chopped or ¼ cup (55 g) raisins
Instructions
1. Preheat the oven to 325°F (165°C or gas mark 3)
2. Mix all the ingredients in a bowl or food processor (except for the dates/raisins) for a few minutes until batter is well blended
3. If you are going to add in the dates or raisins, stri them into the batter at this stage so that they are evenly spread throughout
4. Form the batter into small 1-inch balls and drop them evenly onto a greased non-stick baking pan
5. Bake for 20-25 minutes or until golden-brown and baked through

20-25 cookies
