> Blue Salad with Pink Dressing
BLUE SALAD WITH PINK DRESSING
The dressing for the recipe will come out a pinkish color from the blueberries. It is fun for the kids to eat a “blue” dotted salad with a “pink” dressing on top.
Ingredients
5 ounces (100 g) butter lettuce 1-2 tablespoons (10-15 g) sunflower seeds* ½ cup (75 g) fresh whole blueberries Dressing: 1 tablespoon (15 mL) red wine vinegar 1½ tablespoons (22 mL) sunflower oil 5-8 fresh whole blueberries 1 tablespoon (20 g) honey and serve. *Note: Wait for at least 3 months after symptoms have cleared to try any kind of seeds.
Instructions
1. Chop the lettuce to desired cut for eating (if it has not come pre-chopped)
2. Add in the blueberries and sunflower seeds as the salad topping
3. For the dressing, in a small immersion blender (use the jar attachment if you have one), combine all the elements for the dressing
4. Alternately, you can whisk together in a small bowl
5. Drizzle onto the lettuce
Yield
2-4 servings with N cup (80 mL) of dressing
