1/3 cup walnut pieces (I used pine nuts)
1/4 cup butter (I used this amount minus 2 TBSP)
2 small or medium zucchini, coarsley shredded
salt and pepper to Taste
1. Saute nuts in butter until lightly browned (Be careful not to burn.) Remove nuts.
2. Saute zucchini briefly--about a minute to two--in the same pan.
3. Sprinkle with a few drops lemon juice; season.
4. Add nuts toss and serve. YUM!!!!!!
