1/2 cup cold mashed cauliflower
1 egg, beaten
2 tablespoons almond flour
salt and pepper to taste
1/4 teaspoon dried basil
1 tablespoon grated onion (optional)
1 tablespoon strained yoghurt
1/4 teaspoon baking soda
2 tablespoons sunflower oil
1. Add other ingredients to beaten egg and stir until well mixed. If desired refrigerate 30 minutes before cooking.
2. Heat a six inch skillet and add the oil. Spoon in the batter. It should make three pancakes. Cook until browned on one side. Turn and finish. Place on double thickness of paper towel to drain fat.
3. Serve topped with yogurt or honey.
