2- 2 1/2 pounds meaty chicken pieces
1/2 teaspoon finely shredded lime peel
1/4 cup lime juice
1 tablespoon cooking oil
2 cloves garlic, minced
1 teaspoon dried thyme or basil, crushed
1/2 to 1 teaspoon cracked black pepper
1/4 teaspoon salt
1. Skin chicken if desired. Rinse chicken & pat dry.
2. Place chicken pieces, bone side up, on the unheated rack of a broiler pan. Broil 4-5 inches from the heat about 20 min. or till lightly browned.
3. Meanwhile, for glaze, stir together lime peel, lime juice, oil, garlic, thyme or basil, pepper and salt. Brush chicken with glaze.
4. Broil chicken for 5-15 minutes more or till chicken is tender and no longer pink, brushing often with glaze during last 5 minutes of cooking.
