ARTICHOKE DIP     [print]  |  [comments]

Ingredients
4 artichoke hearts, chopped
1/4 cup mayo
1/8 cup parmesan cheese, grated
1/8 cup celery, chopped
1/8 cup onion, chopped
1/8 cup green onions, thinly sliced
1 tablespoon fresh parsley, chopped
1/2 teaspoon garlic, finely chopped
1/2 teaspoon black pepper
1/4-1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 1/2 cups dripped half and half yogurt

Instructions
1. Artichokes: Buy some in the store...we used a package of four we bought at the ever-luxurious Walmart. Cut off the stem and clip the tops of the flower petals (pokey things), put upside down in small amount of water and simmer with the lid on for 45-60 minutes. Eat the goodies off the bottom of the leaves with mayo or melted butter until you get into the center. Spoon off the weedy part shallowly (I don't know what its called) and the rest is the heart...save that and refrigerate.

2. Mix ingredients well and refrigerate.
