3/4 cup butter at room temp (1 1/2 sticks)
2/3 cup honey
3 cups almond flour
2 teaspoons vanilla
1/4 teaspoon almond extract
1 teaspoon ground cardamom*
(*You could use the flavorings from another shortbread recipe - maybe lemon rather than cardamom - this is a spicy shortbread.)
1. Whip together the butter and honey.
2. Mix in the remaining ingredients.
3. Bake in a greased 8 inch x 8 inch pan at 350 F (180 C) for 35 or so minutes - until lightly browned on top.
