3 egg whites
1/8 teaspoon salt
1/3 cup honey
1 teaspoon vanilla
1 1/4 cup unsweetened coconut
1. Preheat oven to 300F.
2. Mix egg whites and salt, beat until stiff.
3. Slowly add honey to mixture, beating constantly.
4. Fold in vanilla and coconut.
5. Use mixture to fill paper muffin cups--fill each cup halfway
6. Bake for about 25 - 30 min., or until tops are lightly browned.
