1 cup honey
18 oz. cashew butter (Hadar or Yums brand)
1/2 cup oil
1-1/2 tsp. baking soda
3/4 tsp. cinnamon
1 tsp. vanilla extract
1. Separate the eggs. Beat the egg whites until stiff. Slowly add the yolks.
2. In a separate bowl, mix the cashew butter and the oil by hand until smooth. Mix into egg mixture. Add the honey, baking soda, and cinnamon.
3. Pour into four 7" pans. Bake on 300 degrees F. for approximately 50 minutes.
