2 tablespoons olive oil
1 tablespoon chopped green onion
1/2 cup blue cheese
2 large firm tomatoes
1 tablespoon dill
6 teaspoons homemade SCD legal Mayo
1. In a pan heat oil for about a minute on low heat. Combine eggs, onions, blue cheese in a bowl. Add this mixture to the pan and scramble.
2. Slice tomatoes thinly to make the "bun". Put the scrambled mixture in between two slices of tomato that have been lightly spread with a teaspoon of mayo.
3. Sprinkle dill on top of your tomato, and eat like a sandwich.
