4 ounces ground beef
1 ounce block cheese
1. Brown beef in pan, separating into small pieces as it cooks.
2. Beat eggs in small bowl.
3. Grate 1oz. of block cheese (colby, swiss, cheddar, jack... whichever you prefer. I prefer colby jack) over ground beef and let it begin to melt in the pan.
4. Add eggs to pan, allowing them to surround the beef and cheese. When the bottom has become done enough, fold omelette and allow the eggs to cook to desired firmness.
