2 teaspoons butter
1 onion, sliced
1 cup homemade chicken or beef broth
1 cup water
1/2 teaspoon chopped fresh cilantro leaves [optional]
1/4 avocado, peeled and sliced
1. Melt margarine in small saucepan over medium heat.
2. Separate onion slices into rings and saute in butter until golden.
3. Add seasoned broth and cilantro leaves.
4. Stir to blend. Lower heat and simmer about 5 minutes.
5. Pour into heated soup bowls. Add avocado slices.
